我们中国人讲究吃,是世界第一
我们既生而为人,也就不能免俗。然而讲究起吃来,这其中有艺术,又有科学,要天才,还要经验,尽毕生之力恐怕未必能穷其奥妙。
随便哪位厨师,手艺都不在杜威克伯屈的高足之下。然而一般中国人之最善于吃者,莫过于北京的破旗人。
从前旗人,坐享钱粮,整天闲着,便在吃上用功,现在旗人虽多中落,而吃风尚未尽泯。

我们中国人外带着肚量大。一桌酒席,可以连上一二十道菜,甜的、咸的、酸的、辣的,吃在肚里,五味调和。饱餐之后,一个个的吃得头部发沉,步履维艰。不吃到这个程度,便算是没有吃饱。
